Swiss Steak Sandwich
1 tablespoon vegetable oil
1 1/2 pounds round beef steak, tenderized and sliced into thin strips
4 tablespoons butter
2 tablespoons olive oil
2 cups onion, chopped
2 cups mushrooms, chopped
2 teaspoons soy sauce
1 teaspoon kosher salt
1 teaspoon coarsely ground black pepper
1/2 teaspoon red pepper flakes
4 oz. Swiss cheese, grated
Texas Toast, toasted
Heat a large cast iron skillet on medium high with vegetable oil. Cook the strips of beef, stirring frequently until browned, 5-7 minutes. Remove from the pan and set aside. Melt butter with the olive oil and saute onions and mushrooms until tender, 3-5 minutes. Season with soy sauce, salt, black pepper, and red pepper. Return beef to pan and stir to combine. Sprinkle with Swiss cheese. Serve on Texas Toast. Serves 3-4
