Egg and Sausage Muffins
1/2 pound ground pork sausage
12 eggs
1 tablespoon minced onion
1 teaspoon parsley
1/2 teaspoon whole mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup shredded muenster cheese
Preheat oven to 350 degrees. Line muffin tin with paper liners and coat with cooking spray.
In a large skillet, brown sausage over medium-high heat. Drain. In a large bowl, beat eggs. Add onion, parsley, mustard, salt, and black pepper. Stir in sausage and cheese. Fill muffin cups 1/2 full. Bake 20-25 minutes or until knife inserted in center comes out clean. Makes 1 dozen. May freeze, if desired.
