Microwaved Stuffed Pepper Casserole
1 pound ground beef
1 cup minced onion
2 garlic cloves, minced
1 cup cooked brown rice
8 oz. tomato sauce
1 tablespoon Worcestershire sauce
1 teaspoon parsley
1/2 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded extra sharp cheddar cheese
2-3 green peppers, quartered
2/3 cup barbecue sauce
In a large bowl, combine ground beef, onion, garlic, rice, tomato sauce, Worcestershire sauce, parsley, basil, salt and pepper. Mix well. Place in large microwavable dish. Sprinkle with cheese. Place quartered peppers on top, pressing into the meat mixture. Drizzle with your favorite barbecue sauce. Cover with lid and cook on high for 15-20 minutes until meat has cooked and is no longer pink. Serves 4-6
