Sausage and Biscuit Casserole



2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/3 cup butter
1 cup milk
8 oz. ground sausage
6 eggs, beaten
2 tablespoons minced onion
salt and pepper
1 cup cheddar cheese
sausage gravy (optional)

Preheat oven to 425 degrees. In small bowl, combine flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk with a fork until blended. Set aside.

In large skillet, brown sausage. In small bowl, whisk eggs with onion. Pour into hot skillet with sausage and cook until set. Sprinkle with salt and pepper to taste.


Spray square baking pan with cooking spray. Drop half of biscuit dough by spoonfuls into bottom of pan, spreading to edges. Spoon sausage and egg mixture over dough. Top with remaining biscuit dough and sprinkle with cheese. Bake for 20-25 minutes until cooked. Serves 6.
