1 pound ground sausage
10 eggs
2 tablespoons minced onion
1 1/2 cups shredded Monterey Jack cheese
8 flour tortillas
Brown sausage in large skillet. Drain on plate with paper towel and set aside. In medium bowl, whisk together eggs and minced onion. Pour into hot skillet and cook until eggs are cooked through. Add browned sausage to mixture. Sprinkle with shredded cheese. Allow cheese to melt. Heat flour tortillas in microwave. Add egg mixture and roll inside tortillas. May serve with salsa or hot sauce. Serves 8.
